They come from the mountainous country of Nepal, which nestles in the Himalayas bordering Tibet in the North, and India on it's southern foothills. Nepal has many geographical regions and this is reflected in the preparation of food which varies from region to region. However, the common factor is the use of spices and flavouring such as ginger, garlic, turmeric (ayurvedic herbs powder), peppers, chillies, cumin, coriander, cilantro and fresh herbs.
